Toast Under the Oaks beer festival at Nottoway Plantation was the perfect occasion for the whole Gov’t Taco team to get out and sell some awesome tacos. If you ask us, a taco is the perfect snack to go along with the over 200 commercial and homebrewed beers served at the festival.

At Toast Under the Oaks, we featured our Clucks and Balances and Uncle Swine tacos. Clucks and Balances consists of creamy pimento mac & cheese, spicy & sweet smoked chicken thighs, white BBQ sauce, and crispy fried Nashville hot chicken skins. “Woah, is that mac & cheese on a taco?” was a frequently muttered comment from beer fanatics stumbling out of the festival.

The Uncle Swine

The Uncle Swine taco is a warm charred Hola Nola hybrid tortilla filled with Old Fashioned inspired orange/cherry/chile braised pork, sweet and tangy pickled jicama cubes, and delicate cilantro microgreens. For sides, the team sold hatch chile queso with Hola Nola chips and BBQ crawfish elote. Everything we served at the event will be featured on the main menu at Gov’t Taco when it opens up at White Star Market.

The team is always happy to serve tacos, especially when we get to try some local and unique beers at a beautiful location. We were lucky to use the Goodwood Hardware trailer, including two grills, cast iron cauldron, and outdoor deep-fryer, allowing us to do an enormous amount of cooking on site under our Gov’t Taco tent.
