Gov’t Taco loves beer. Do we love beer so much that we would sit in line for two hours waiting for a brewery to open to buy a case of said beer? I’m not sure. But, despite the 95 degree heat, there was a line of beer connoisseurs camped out in front of Parish Brewery Friday, July 28th anxiously awaiting the opening of the tap room doors. It was Bloom release day, and we were out there to celebrate, and of course, sling tacos.

Our Goodwood Hardware trailer, packed full of grills and fryers, pulled away from the office at 8am, ready for a long day of slinging tacos. We wanted to be set up in time for the beer fanatics that were getting to the brewery early to wait in line. We were expecting tons of taco and beer lovers to pass through Parish Brewery in Broussard that day, so we came prepared to sell hundreds of tacos, orders of chips and salsa, and helpings of queso.

It all Panned Out

On the menu we were serving up our fan favorite taco “Uncle Swine” with braised pork, sweet and tangy pickled jicama, a sprinkle of cotija cheese, and delicate micro cilantro. Next, “Shrimper Fi” with crispy shrimp served over sweet coconut almond Supreme Rice, topped with pineapple salsa, crunchy almonds, and micro greens. And Finally, “Eggplantoral College” with gochujang stir-fried eggplant, kimchi mayo, crushed peanuts, sesame seeds, and green onions. To top it off we were dishing up servings of our salsa trio and our delicious roasted hatch chile queso with Hola Nola chips.

It was a long and hot day, but a good one. Parish was generous enough to provide us with an ample supply of Bloom, which we exchanged for a continuous stream of tacos. We saw customers leave with anywhere from one 4-pack of of the pink flowered box of Bloom to a golf cart full of cases. The sun was out, the tacos were flying, and the beer was flowing. We were happy to be out there to support Parish’s release of Bloom, and lucky to visit our friends in Acadiana.
